Ingredients:
- 1 kg mutton (with bones)
- 1 tablespoon salt (adjust to taste)
- 1 tablespoon cumin seeds
- 4-5 green chilies (whole or sliced)
- 1 cup ghee or oil
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 2 medium-sized tomatoes
- Fresh coriander leaves (for garnish)
Method:
- Wash the mutton pieces thoroughly and set them aside.
- In a large pot, heat the ghee or oil over medium heat.
- Add the ginger paste and garlic paste to the pot.
- Stir and cook for a few minutes until the raw smell of ginger and garlic disappears.
- Add the mutton pieces to the pot and sauté until the mutton starts to brown slightly.
- Add salt and cumin seeds. Mix well to coat the mutton with the spices.
- Add enough water to cover the mutton. Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 1.5 to 2 hours, or until the mutton is tender and cooked through. Stir occasionally and add more water if needed to prevent it from drying out.

- Garnish the Namkeen Gosht with fresh coriander leaves.
