2 cups all-purpose flour (maida)

½ teaspoon carom seeds (ajwain)

1 teaspoon salt, or to taste

½ teaspoon ground black pepper

¼ teaspoon baking powder

3 tablespoons ghee or vegetable oil

Water, as needed for kneading

Instructions

1. Prepare the Dough:

In a large mixing bowl, combine the all-purpose flour, carom seeds, salt, ground black pepper, and baking powder.

Add the ghee or vegetable oil to the dry ingredients and mix well using your fingertips until the mixture resembles coarse crumbs.

Gradually add water, a little at a time, and knead the mixture into a firm and smooth dough. The dough should not be too soft or too stiff.

2. Rest the Dough:

Cover the dough with a clean kitchen towel or plastic wrap and let it rest for about 15-20 minutes.

3. Roll and Cut:

After resting, divide the dough into small equal-sized portions.

Take one portion of the dough and roll it out into a thin sheet on a lightly floured surface.

Use a knife or a pizza cutter to cut the rolled dough into small diamond or square-shaped pieces.

4. Fry the Namak Parey:

Heat oil in a deep frying pan or kadhai over medium heat.

Once the oil is hot, carefully add the cut Namak Parey in batches, making sure not to overcrowd the pan.

Fry the Namak Parey until they turn golden brown and crispy, stirring occasionally for even frying.

Using a slotted spoon, remove the fried Namak Parey from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Repeat the frying process with the remaining dough portions until all Namak Parey are fried.

5. Cool and Store:
