Gluten-Free Millet Upside Down Fruit Cake Recipe

Ingredients

1/2 cup Gram flour

1/2 cup Barley flour

1/2 cup Fine Corn meal

1/2 cup Pearl millet flour

1/2 cup butter

1/2 cup brown sugar

1 tsp vanilla

1/3 cup Yogurt

3 Bananas, mashed

1 cup mixed fruit salad (fruit chat)

Optional: 1/8 cup mixed chopped nuts (almond, pistachio, coconut)

1 tsp baking soda

Instructions

  1. Cream butter and sugar (reserving 4 tbsp of sugar). Add wet ingredients, including mashed bananas. Combine thoroughly.
  2. Mix all dry ingredients together. Take 3 tbsp of dry ingredients and add to half a cup of the fruit salad. Mix until all is coated in flour.
  3. Combine wet and dry ingredients into a thick batter, reaching the consistency of oatmeal.
  4. Line a 6-7 inch cake pan with parchment paper, sprinkle reserved sugar in a ring at the bottom. Spread the remaining fruit salad on top of the sugar. Pour batter over the fruit.
  5. Bake at 350°F (177°C) for an hour, checking for doneness with a toothpick. Continue checking in 10-minute intervals until done.
  6. Let the cake cool for 10 minutes before inverting onto a wire rack with a drip tray underneath. Allow it to cool completely before cutting and serving. Enjoy your gluten-free millet upside-down fruit cake!
