On goes my streak of weird foreign dishes, now with Potato Noodles
I cooked these noodles after seeing a short on YouTube… they turned out ok, but I messed up a few things, and I hope you’ll be able to learn from my mistakes.
The Potato Noodles Ingredients
2 medium yellow potatoes 500g, 1.1 lb
¼ cup potato starch/corn starch
2 litres of water
⅛ cup salt
Chili Oil Sauce
3 cloves garlic
1 stalk green onion julienned
½ tsp red chilli powder
¼ tsp garam Masala powder
1 tsp brown sugar
1 tbsp soy sauce
½ tsp vinegar/pickle juice
¼ cup vegetable oil/ghee
2 tbsp coriander chopped finely
1 small onion chopped finely
1 cucumber julienned
½ tsp salt
INSTRUCTIONS
- Peel, chop, and boil potatoes until tender.
- Transfer potatoes to bowl and finely mash.
- Add starch, mixing and kneading, then taking a mallet or a mortar, pound the potatoes until sticky and glutinous, then form a firm and smooth dough ball.
- Roll dough into a long log, then divide the log into 16 pieces
- Roll the dough pieces into chopstick-length strips.
- Carefully transfer the potato noodles to boiling water for 5 minutes or until fully cooked.
- Transfer cooked noodles to cold water, drain, and then transfer to a bowl.
- Place all toppings on noodles, gently pour hot oil onto the toppings and noodles.
- Mix well and enjoy!
