Peshawari Golden Pulao Recipe

Pakistan consists of 5 provinces and each province has its own special dishes which are liked by all Pakistanis. Today we are sharing with you a special dish from Khyber Pakhtunkhwa province which is generally called Peshawari golden pulao or beef chana pulao. It is  is one of the famous recipe of Peshawar. Peshawar is the capital city of KPK province in Pakistan and is very famous for its traditional cuisine. This is a very famous and popular street food in Peshawar.

Ingredients for Peshawari Golden Pulao

•    Rice 500 grams (soaked for 1 hour)

•    Beef mix boti 500 grams

•    ginger garlic paste2 tablespoon

•    water 2 liters

•    Ghee 1 cup

•    Laung (cloves) 4-5

•    Zeera (cumin seeds) 1 teaspoon

•    Namak (salt) 1 tablespoon or to taste

•    crushed red chillies 11/2 teaspoon

•    coriander seeds 1 tablespoon

•    Ajwain (carom seeds) 1/4 teaspoon

•    black pepper corns 1/2 tablespoon

•    cinnamon stick 2-3

•    green cardamom 4-5

•    black cardamom 2-3

•    cumin seeds 1/2 tablespoon

•    onion1 medium sliced

•    raisins 1/2 cup

•    chickpeas 1 cup boiled

Method

  1. Soak chickpeas in water overnight
  2. In the morning cook the chick peas in a pressure cooker for 15 minutes
  3. Drain the water in a pan and put the boiled chickpeas aside
  4. Wash the beef boti and pour the drained chickpea water and 1 liter more water In the pressure cooker with beef boti;
  5. Add ½ table spoon salt, red chili  and cook for at least for 20 minutes;
  6. Now open the pressure cooker and separate the beef and broth and keep them in separate bowls;
  7. Meanwhile wash the rice and soak in water;
  8. Now put a pot big enough for cooking rice and add ghee;
  9. On medium flame fry the raisins for 50 seconds and then lower the flame and separate the raisins in a bowl;
  10. Now in the same pot and ghee add chopped onions and cook until dark brown;
  11. Add beef and saute for about 3 minutes; 
  12. Now add chickpea, cloves, and other all masalas and cook for 30 seconds;
  13. Now measure the broth and add in the cooking pot;
  14. The water should exactly be 1 ¼ liters ; If needed add simple water for exact measurement;
  15. When water come to boil add rice and cook for 7 minutes;
  16. Add raisins and mix well and then close the fire;
  17. Cover the pot and leave it for 15 minutes;
  18. Very tasty Peshawari Golden Pulao is ready to serve.
