Ingredients
1/2 cup Gram flour
1/2 cup Barley flour
1/2 cup Fine Corn meal
1/2 cup Pearl millet flour
1/2 cup butter
1/2 cup brown sugar
1 tsp vanilla
1/3 cup Yogurt
3 Bananas, mashed
1 cup mixed fruit salad (fruit chat)
Optional: 1/8 cup mixed chopped nuts (almond, pistachio, coconut)
1 tsp baking soda
Instructions
- Cream butter and sugar (reserving 4 tbsp of sugar). Add wet ingredients, including mashed bananas. Combine thoroughly.
- Mix all dry ingredients together. Take 3 tbsp of dry ingredients and add to half a cup of the fruit salad. Mix until all is coated in flour.
- Combine wet and dry ingredients into a thick batter, reaching the consistency of oatmeal.
- Line a 6-7 inch cake pan with parchment paper, sprinkle reserved sugar in a ring at the bottom. Spread the remaining fruit salad on top of the sugar. Pour batter over the fruit.
