I love vegetables and love rice as well. One day we had some vegetables in the fridge and I wanted to use these vegetables in an interesting manner and wanted to make something delicious and tasty with all the ingredients so we came up with this recipe for Vegetable Rice.
My daughter helped by chopping the vegetables. She is good at chopping, so we both created this recipe by using common sense. Hope you enjoy making the vegetable rice and eat with the family and friends. Here is the Vegetable Rice recipe:
Ingredients
- Rice 1 Kg
- Carrots ¼ kg ( Chopped in cubes)
- Cabbage ¼ kg (chopped finely)
- Green Onions (chopped 1 cup)
- Green peas ½ kg
- Green coriander (1 cup chopped finely)
- Eggs 3
- Red chili 1 teaspoons
- Salt 3 1/2 teaspoons
- Ghee or oil 4 serving spoons
- Green chili 2 chopped finely
Method
- Soak rice in plain water;
- In an open mouthed cooking pot pour 3 ½ liters of water and add 4 teaspoons of salt;
- when water boils add the soaked rice;
- Lower the flame;
- Let the rice get soft and drain the remaining water;
- Put an open mouthed pan on medium heat and add ghee or oil ;
- Add green peas and stir fry them until they are soft;
- Now add carrots and stir fry them as well;
- After 3 minutes add cabbage , green onion and green chili;
- Keep stirring so that all the vegetables are evenly fried;
- Now take it off the fire;
- Now take a bowl and beat the eggs thoroughly;
- Use a tawa to make a roti of the eggs and cook it from both sides;
- Cut the egg in small pieces and add the cooked eggs to vegetables already fried;
- Now put it again on fire and add 1 tsp of salt and 1 tsp of red chili;
- Stir for one minute and mix with boiled rice and cover it with the lid and leave for 15 minutes on a hot tawa with no fire underneath;
Vegetable rice is ready, serve it with salad and some sauce;
