Ingredients for Maakhandi Halwa
1 cup semolina (suji)
1/2 cup ghee
1 cup sugar
3 cups milk
1 tsp cardamom powder
¼ cup powdered almond
¼ cup powdered coconut
¼ cup raisins
Instructions
Soak the semolina in 1 cup of milk overnight;
In the morning heat the ghee in a heavy-bottomed pan over medium heat. Add the semolina and fry it until it turns light brown, stirring constantly. Be careful not to burn the semolina.
Add 2 cups of milk to the semolina and stir well. Add the almond and coconut powder at the same time. Keep stirring until the semolina absorbs all the milk and the mixture thickens.
Add sugar and cardamom powder and mix well. Continue to cook over medium heat, stirring constantly until the sugar dissolves and the halwa thickens.
Turn off the heat and let the Maakhandi halwa rest for a few minutes.
Serve hot, garnished with raisins.
