Achari chicken is a dish which can be cooked quickly and tastes different from the normal korma, or chicken karahi; although my children do not like it much and I must cook two different things when I cook Achari chicken.
INGREDIENTS
1 kg chicken (cut in small pieces)
3 tbsp oil or ghee
3 tomatoes chopped in small pieces
3 large onions cut in slices
3 tbsp yogurt
1 tsp garlic paste
1 tsp ginger paste
1 tsp salt
1 tsp red chilli powder
1/4 tsp turmeric
1 tsp coriander powder
1 tsp ground cumin
1/2 tsp fenugreek seeds
1/2 tsp nigella seeds
1 tsp fennel seeds
3 green chilli
fresh coriander to garnish
INSTRUCTIONS
1, Heat the oil in a cooking pan and add the ghee/oil, then on a medium flame fry the onions until they are brown in colour;
2, Add tomatoes, fried onions, ginger and garlic and saute for 3 minutes, keep stirring so that everything is mixed thoroughly. Now add yoghurt and all the remaining masala and chicken and cook for about 4 minutes, keep stirring so that the chicken does not burn,
3. Now add 1 cup of water and cover the cooking pan with a lid and cook for ten minutes on a low flame, check if the chicken is soft then dry on a medium flame and at the end add green chilli and green coriander. Very tasty Achari chicken is ready to serve,
4. Serve with naan or flatbread.
