I got this chicken tikka masala recipe from my aunt, who served it to us when we went to visit her. The chicken tikka masala tasted brilliant so I wanted to share it with you guys as well. Plus it was the first time I saw anyone use this technique. This dish combines chicken tikka and masala into one delicious conglomeration.
Ingredients
1 Kg Chicken
½ packet Chicken Tikka Masala
2 tbsp. Garlic (Lasun) paste
2 tbsp. Ginger Paste (Adrak)
1 cup Yogurt
½ tsp. Cumin seeds (Zeera)
1 tbsp. Green Chilli Sauce
2 tbsp. Soy Sauce
2 tbsp. Vinegar
1 tsp. Salt (increase/decrease according to preference)
½ cup Oil + 1 tbsp. for the smoking
1 coal
Method
- In a large bowl add almost all the ingredients, Leaving out the chicken and reserving ¼th cup of oil for later.
- Mix together well and add the chicken to the mixture piece by piece, coating each piece generously.
- Let this mixture marinate for at least 1 hour or up to four.
- Add the rest of the oil to a large pot (ensure that the pot you use has a lid).
- Heat the oil to shimmering and add the marinated chicken along with all the marinade.
- Cook at a high heat for 4-5 minutes, stirring occasionally, then reduce heat so that the chicken can cook through and the juices can simmer.
- Let the chicken simmer at a low heat for 15 minutes, stirring occasionally. If, after 15 minutes the chicken is cooked through; proceed to the next step, otherwise wait another 5 minutes.
- Turn the heat back up and evaporate any excess water from the pot, the finished dish should have a thick paste-like curry, however no soupiness should remain.
- Once the chicken is sufficiently dry, take your coal and heat it until its blazing.
- Turn off the heat and cover the pot.
- Place the blazing coal in a small metal bowl which easily fits into the pot and still allows for the lid to cover. If you don’t have such a utensil; then create a small bowl shape using aluminum foil and place the coal in it.
- Place the coal, in its bowl on top of the chicken in the dish and add a few drops of oil to the coal cover the pot once you have done this.
- Let the dish smoke for 5 minutes, before removing the coal carefully using tongs and serving.
- Delicious chicken tikka masala is ready to go!
