Bottle Gourd & Gram Flour Flatbread Recipe (Loki aur Besan ki Roti) is a wholesome, flavorful flatbread made with grated bottle gourd and gram flour, combined with wheat flour and aromatic spices. Soft on the inside and crisp on the outside, this nutritious roti is rich in fiber, protein, and essential vitamins. It’s an excellent way to incorporate vegetables into your daily meals, especially for kids and picky eaters. Light on the stomach yet satisfying, it pairs perfectly with yogurt, pickle, or even on its own, making it a delightful choice for breakfast, lunch, or dinner.

 Ingredients for Bottle Gourd & Gram Flour Flatbread

  • Bottle gourd (grated): 1 cup
  • Gram flour (besan): 1 cup
  • Whole wheat flour: 1 cup
  • Green chilies (finely chopped): 2
  • Fresh coriander, chopped: 2 tbsp
  • Cumin seeds: ½ tsp
  • Salt: to taste
  • Red chili powder: ½ tsp
  • Turmeric powder: ¼ tsp
  • Carom seeds (ajwain): a pinch (helps digestion)
  • Onion (finely chopped): 2 tbsp (optional)
  • Desi ghee 2 tbspoons

Method

Step 1: Prepare the Ingredients

Wash and peel the bottle gourd and grate it, then in a large mixing bowl, combine the following:

  • 1 cup gram flour (besan)
  • 1 cup whole wheat flour
  • All spices (salt, red chili powder, turmeric, cumin, and carom seeds)
  • 2 tbsp finely chopped onion (optional)
  • 2 finely chopped green chilies
  • 2 tbsp fresh coriander, chopped
  • 1 cup grated bottle gourd (lauki)

Mix everything well.

Tip: Bottle gourd naturally releases water, so add very little or no extra water while kneading. You want a soft, non-sticky dough.

Step 2: Rest the Dough

Cover the dough and let it rest for about 10 minutes.
This allows the flours to fully absorb moisture, making the roti softer and easier to roll or spread.

Step 3: Cook the Roti

  1. Heat a flat pan (tawa) on low-medium flame and brush it lightly with desi ghee.
  2. Take a portion of the dough and flatten it directly on the tawa using a spoon or wet fingers.
    • Keep the roti medium-thick (about a quarter to half an inch) so it cooks evenly from the inside.
  3. Cook on low heat, flipping a few times until golden brown spots appear on both sides.
  4. Brush each side with a little more ghee for extra flavor and crispiness.

Serving Suggestions

Serve hot with:

  • Fresh yogurt
  • Spicy pickle
  • A cup of chai (tea)
  • Or your favorite curry
