Egg Pudding
Usually Eid ul Adha is known for the beef, mutton and other meat related dishes, but I think Eid is not complete without a sweet dish, so I am sharing here a simple recipe for a sweet dish, which can even be made without much sugar. So please try and share with us your experience.
Ingredients
- Eggs 3
- Milk half liter
- Sugar 7 table spoons
Method
- Separate the egg whites and beat them until they become thoroughly combined with some bubbles on top.
- Beat the yolk of the eggs separately,
- Now mix them together and beat again so that they make a smooth mixture,
- Keep beating and mix the milk by pouring in small quantities, when all the milk is mixed then add 3 tablespoons of sugar and mix well,
- Now take a small saucepan and put it on a low heat
- Add 4 tablespoons sugar, and 1 tbsp water
- Caramelize the sugar until it becomes a dark golden brown, the lighter it is, the sweeter it will be and the darker it is, the more bitter. (Caramelization is the process of letting it brown over the heat. The best way to do this is to let the sugar sit in the pan without stirring until it starts to brown. Then swirl the pan to distribute the brown color evenly.)
- Transfer the hot caramel to your pudding dish/mold. You can use anything which will easily fit inside a large deep pan, and which has a lid. Don’t take long to do this, otherwise the caramel will set hard in the pan.
- Pour the pudding mixture on top of the caramel.
- Now in a bigger pan (big enough to fit your pudding dish) add enough water to cover the bottom and 1 inch of the sides of the pan.
- Place the pudding dish inside the pan with water and make sure that lid on the dish is tight,
- Now move the large pan to the fire
- Keep the pudding dish covered with its lid and cook for 30 minutes, ensuring that the water is boiling the whole time (medium heat).
- After 30 minutes check whether the pudding has cooked through by poking at its middle with a toothpick, if the pudding is still liquid then cook for 5 more minutes,
- Let it cool and then lift the smaller pan out of the bigger pan,
- Now take a dish and turn the pan upside down in it,
- Beautiful and tasty pudding is ready, put it in refrigerator for cooling,
- When it cools serve independently or with cake.
